You could try passing the corn through the mill a second time, although it sounds like it's hard work. With some hand mills I think people routinely do a second pass in order to get finer flour. (Just what I've read.)
ReplyDeleteI wonder if you can make something using rice flour and ground beans? Complete protein, and all that. I can't think what to make with rice and no yeast... but I'm sure you can put dried beans through your mill and use it to up the protein content in regular wheat breads.
I did the corn three times through actually. It does make it finer but it's the type of corn that's the issue. Pop Corn is too hard - from what I've read Flint Corn is what corn flour is made from.
ReplyDeleteThat's a good idea about protein from the beans. Actually - using beans in foods is a good trick to get your kids to eat healthier. My wife received a book from a friend written by Jerry Seinfeld's wife with lots of recipes of that sort. It's called Deceptively Delicious: Simple Secrets To Getting Your Kids To Eat Good Food - You might be able to adapt some of those recipes.
